This study examines the value chain of milk from informal dairy processing units in Haryana, India using a system dynamics approach. Three models of milk procurement systems were identified: collection center system (Model I), integrated production and processing system (Model II), and private vendor system (Model III). Model III accounts for 62.96% of procurement, followed by Model I (29.63%) and Model II (7.41%). The value chains for each model were mapped from milk production to consumption. Collection costs were lowest for Model I. Model II was found to attain higher profits of Rs. 9.56/L compared to Rs. 2.65/L for Model I and Rs. 1.78/L for Model
