Ingredients
2 (15.5 oz.) cans garbanzo beans, drained 1 (7 oz.) jar roasted red bell peppers, drained
1/2 C. water 6 oil-packed sun-dried tomatoes, drained
1/4 C. tahini (sesame-seed paste) 1/2 C. chopped cilantro
1/4 C. fresh lemon juice 1/2 tsp salt
2 tbsps olive oil ground black pepper to taste
1 canned chipotle pepper in adobo sauce
2 cloves garlic
1 1/2 tsps cumin
Directions
1. In a food processor, add beans, tahini, chipotle pepper, garlic, oil and lemon juice and
pulse till well combined and smooth.
2. Add the remaining ingredients and pulse till chopped finely.
3. Place the hummus in a bowl and refrigerate, covered before serving.
