Amazing Salad

This great salad is an amazing way to start a meal. The combination of the herbs
with the sweetness of the walnuts and that particular flavor that the cherries have
will have you wanting more.

Yields: 8 servings Ingredients For the walnuts: 3 tablespoons walnuts, chopped
Cooking spray 1 tablespoon sugar For the dressing: 1 tablespoon champagne
vinegar 1/2 cup apple cider 1/8 teaspoon salt 1/4 cornstarch 3 tablespoon water
1/8 teaspoon pepper 1 tablespoon shallots, finely chopped Remaining
ingredients: 2 cups sweet cherries, pitted 1/4 cup blue cheese, crumbled 8 cups
herb salad mix Method of Preparation: For the walnuts:
1. In a small saucepan place the sugar and cook over medium heat until
it dissolves. Make sure to stir constantly so that the sugar doesn’t burn
and dissolves regularly.
2. Reduce the heat and incorporate the nuts.
3. Cook them over low heat until golden.
4. Take a foil that has been coated with cooking spray and spread the nut
mixture on it.
5. Allow it to cool completely and then break into small pieces.

For the dressing:
1. In a saucepan, pour the cider. Bring it to a boil over medium-high
heat. Cook for a couple of minutes, until the it reduces to about 2
tablespoons.
2. In a bowl, mix together the water and cornstarch and incorporate it to
the pan.
3. Bring the mixture to a boil and stir it constantly. Allow it to cook for
about 30 seconds.
4. Remove the mixture from the heat.
5. Incorporate the vinegar, pepper, shallots and salt. Allow the dressing
to cool.

To prepare the salad:
1. Place the salad mix in a bowl.
2. Drizzle the dressing over it and toss everything together.
3. Divide it into 8 equal portions and top the salad with cheese, walnuts
and cherries.
