Bacon-Egg Cheddar Waffle

We love our BECW! My kids think it’s hilarious to eat waffles with
their hands, and it always makes them giggle. It’s a fun breakfast
at home or on the go. Save time...make ’em ahead and freeze!
8 eggs, beaten 1/2 c. shredded Cheddar cheese,
1/3 c. milk divided
4 t. butter, divided 1 lb. bacon, crisply cooked
Whisk eggs and milk together. Melt one teaspoon butter in a small
skillet over low heat. Add 1/4 of egg mixture and cook omelet-style;
top with 2 tablespoons cheese when nearly done. Repeat, making
3 more omelets. Meanwhile, make Waffles. To assemble sandwiches,
slide one omelet between 2 waffles; top with several slices bacon. Slice
in half along the waffle’s divider lines. Serve immediately, or wrap
with wax paper, place in plastic zipping bags and freeze. Serves 4 to 8.
Waffles:
3-1/2 c. white whole-wheat flour 1/4 c. butter, melted
4 eggs, beaten 2 t. baking soda
3 c. buttermilk 1 t. salt
In a large bowl, whisk together all ingredients until smooth. Add
batter by 1/2 cupfuls to a preheated waffle iron; cook according to
manufacturer’s directions. Makes 8 to 12 waffles.
Set the breakfast table the night before...you may
even get the kids to help you. Then enjoy
a relaxed breakfast in the morning!

Becky’s Breakfast Pizza

This recipe is very flexible...use whatever ingredients
you have on hand. Kids love it!
13.8-oz. tube refrigerated 1-1/2 c. mixed vegetables like
pizza dough mushrooms, tomatoes,
5 eggs, beaten peppers, green onions and
1/4 c. milk olives, chopped
1/4 t. dried oregano 1-1/2 c. shredded Cheddar,
1/8 t. pepper Swiss or mozzarella cheese
1 c. cooked ham, chicken, turkey
or bacon, diced
Pat dough into the bottom and up the sides of a greased 11"x9" baking
pan or a large springform pan. Bake at 375 degrees for 10 to
12 minutes, until lightly golden. Meanwhile, whisk together eggs,
milk and seasonings in a bowl; carefully pour mixture onto baked
crust. Bake an additional 8 to 10 minutes, until egg mixture is almost
set. Top with your choice of meat, vegetables and cheese. Return to
oven and bake 5 to 10 minutes more, until cheese melts. Let stand
5 minutes before slicing. Makes 8 to 10 servings.
A muffin tin is handy when breakfast time is short. Fill it up
with chopped veggies and cheese for do-it-yourself breakfast
pizzas, or berries and nuts for topping pancakes, waffles and
oatmeal. It can even be filled and refrigerated the night before.
