ABOUT THE EDITORS
Mohammed Wasim Siddiqui, PhD
Dr. Mohammed Wasim Siddiqui is an Assistant Professor and Scientist in
the Department of Food Science and Post-Harvest Technology, Bihar Agri-
cultural University, Sabour, India and author or co-author of more than 40
journal articles, more than; 40 book chapters, and several conference papers.
He has 22 books to his credit published by Elsevier, CRC Press, Springer,
and Apple Academic Press.
He is the Founder Editor-in-Chief of two book series, Postharvest
Biology and Technology and Innovations in Horticultural Science, both
being published by Apple Academic Press. He is also is a Senior Acqui-
sitions Editor for Horticultural Science. Dr. Siddiqui established an inter-
national peer reviewed journal Journal of Postharvest Technology. He has
been serving as an editorial board member and active reviewer of several
international journals, including Horticulture Research (Nature Publishing
Group), Postharvest Biology and Technology (Elsevier), PLoS ONE, (PLOS),
LWT- Food Science and Technology (Elsevier), Food Science and Nutrition
(Wiley), Journal of Plant Growth Regulation (Springer), Acta Physiologiae
Plantarum (Springer), Journal of Food Science and Technology (Springer),
and Indian Journal of Agricultural Science (ICAR).
Dr. Siddiqui has received numerous awards and fellowships in recogni-
tion of his research and teaching achievements. Recently, he was conferred
with the Glory of India Award (2017), Best Researcher Award (2016), Best
Citizens of India Award (2016), Bharat Jyoti Award (2016), Outstanding
Researcher Award (2016), Best Young Researcher Award (2015), Young
Scientist Award (2015), and the Young Achiever Award (2014) for
outstanding contribution in research and teaching from several organiza-
tions of national and international repute. He was also awarded a Maulana
Azad National Fellowship Award from the University Grants Commission,
New Delhi, India. He is an honorary board member and life time author
in the Society for Advancement of Human and Nature (SADHNA), Nauni,
Himachal Pradesh, India. He has been an active member of the organizing
committees of several national and international seminars/conferences/
summits. He is one of key members in establishing the World Food Preser-
vation Center (WFPC), LLC, USA. Presently, he is an active associate and

supporter of WFPC, LLC, USA. Considering his outstanding contribution
in science and technology, his biography has been published in Asia Pacific
Who’s Who, Famous Nation: India’s Who’s Who, The Honored Best Citizens
of India and Emerald Who’s Who in Asia.
Dr. Siddiqui acquired his BSc (Agriculture) degree from Jawaharlal
Nehru Krishi Vishwa Vidyalaya, Jabalpur, India. He received his MSc
(Horticulture) and PhD (Horticulture) degrees from Bidhan Chandra Krishi
Viswavidyalaya, Mohanpur, Nadia, India, with specialization in posthar-
vest biotechnology. He has received several grants from various funding
agencies to carry out his research projects. He is dynamically involved in
teaching (graduate and doctorate students) and research, and he has proved
himself as an active scientist in the area of postharvest biotechnology.
Mohammad Shafiur Rahman, PhD
Mohammad Shafiur Rahman is a Professor at the Sultan Qaboos University,
Sultanate of Oman and the author or co-author of over 300 technical arti-
cles, including 117 refereed journal papers, 107 conference papers, 66 book
chapters, 34 reports, 13 popular articles, and 8 books. He is the author of
the internationally acclaimed and award-wining Food Properties Handbook,
published by CRC Press, which was one of the bestsellers from CRC Press
in 2002. The second edition is now released under his editorship. He is also
the editor of the popular book Handbook of Food Preservation, published
by CRC Press. The first edition was one of the bestsellers from CRC Press
in 2003, and the second edition is now an the market. The first edition was
translated into Spanish. In addition, he is one of the editors of Handbook of
Food Process Design (two volumes) published by Wiley-Blackwell in 2012.
He was invited to serve as one of the associate editors for the Handbook of
Food Science, Engineering and Technology, and one of the editors for the
Handbook of Food and Bioprocess Modeling Techniques published by CRC
Press.
Professor Rahman has initiated the International Journal of Food Prop-
erties (Marcel Dekker, Inc.) and has been serving as the founding editor for
more than 15 years. In addition, he is serving on the editorial boards of eight
international journals. He is a member in the Food Engineering Series Edito-
rial Board of Springer Science, New York. He is serving as a Section Editor
for the Sultan Qaboos University journal Agricultural Sciences. In 1998, he
has been invited and continues to serve as a Food Science Adviser for the
International Foundation for Science (IFS) in Sweden.

Professor Rahman is a professional member of the New Zealand Insti-
tute of Food Science and Technology and the Institute of Food Technolo-
gists, and a member of executive committee of the International Society of
Food Engineering, (ISFE). He was involved in many professional activities,
such as organizing international conferences, training workshops, and other
extension activities. He has initiated and served as the Founding Chair of
the International Conference on Food Properties (ICFP). He was invited as a
key note/plenary speaker at eight international conferences.
He received BSc (Eng.) (Chemical) and MSc (Eng.) (Chemical) degrees
from Bangladesh University of Engineering and Technology, Dhaka, an
MSc degree in food engineering from Leeds University, England, and the a
PhD degree in food engineering from the University of New South Wales,
Sydney, Australia.
Professor Rahman has received numerous awards and fellowships
in recognition of his research and teaching achievements, including the
HortResearch Chairman’s Award, the Bilateral Research Activities Program
(BRAP) Award, CAMS Outstanding Researcher Award (2003), SQU
Distinction in Research Award (2008), and the British Council Fellowship.
In 2008 Professor Rahman ranked among the top five leading scientists and
engineers of the 57 OIC member states in the agroscience discipline.
Professor Rahman is an eminent scientist and academic in the area of
food processing. He is recognized for his significant contribution to the
basic and applied knowledge of food properties related to food structure,
food functionality, engineering properties, and food stability. His Google
Scholar citations are more than 20,000 and h-index 63, respectively, which
indicates the high impact of his research in the international scientific
community.
Ali Abas Wani, PhD
Ali Abas Wani is a senior researcher at the Fraunhofer Institute for Process
Engineering and Packaging, Freising, Germany. Born and educated in India,
he has received MS (Food Technology) and PhD (Food Technology) degrees
from leading Indian universities. Since 2006, he has been an assistant
professor at the Islamic University of Science and Technology, Jammu and
Kashmir, India, where he established the Department of Food Technology
and also initiated several key food science programs in the region. Addi-
tionally, he is establishing a food testing center at the Islamic University
of Science and Technology, Awantipora. Dr. Wani is also a co-chair for the
European Hygienic Engineering Design Group (EHEDG) representing the

regional section of India. He is the co-founder and editor-in-chief of Food
Packaging & Shelf Life, published by Elsevier Science, UK.
Dr. Wani has published several international papers, book chapters,
edited books, and numerous conference papers. His research focus is on the
development of functional ingredients and measurement of food quality. In
addition to close association with many scientific organizations in the area
of food science and technology, he is an active reviewer for Carbohydrate
Polymers, Food Chemistry, LWT-Food Science and Technology, Journal of
Agricultural Food Chemistry, and many other scientific journals.

As we know, preserving the quality of fresh produce has long been a chal-
lenging task. In the past, several approaches were in use for the postharvest
management of fresh produce, but due to continuous advancement in tech-
nology, the increased health consciousness of consumers, and environmental
concerns, these approaches have been modified and enhanced to address
these issues and concerns.
The Postharvest Biology and Technology series presents edited books
that address many important aspects related to postharvest technology of
fresh produce. The series presents existing and novel management systems
