This document proposes an energy-efficient edge-fog-cloud architecture for IoT-based smart agriculture. It aims to reduce the overall energy consumption and carbon emissions associated with transferring large amounts of heterogeneous sensor data to the cloud for processing and storage. The proposed architecture allows some agriculture data that requires real-time processing (e.g. weather, soil conditions, irrigation) to be processed at the edge and fog layers instead of sending all data to the cloud. Mathematical modeling using MILP is conducted to optimize the offloading of IoT agriculture applications across the different layers. Results show the proposed architecture can reduce overall energy consumption by 36% and carbon emissions by 43% compared to a traditional cloud-based architecture. It can
