Ingredients
1 C. all-purpose flour 2 eggs, beaten
1 tsp salt 1/2 C. butter
1 tsp pepper
5 green tomatoes, sliced 1/2 inch thick
1 C. crushed saltine crackers
Directions
1. In a shallow dish, crack the eggs and beat them.
2. In another shallow dish, mix together the flour, salt and black pepper.
3. In a large skillet, melt the butter on medium heat.
4. Coat the tomato slices in egg and then roll them in the flour mixture evenly.
5. Fry the tomato slices in the hot butter for about 3-5 minutes on both sides.
