Secrets To Making A Perfect Casserole
Here are a few of our favorite tricks and tips to help you create the best casserole
possible
1.Improve the flavor of your favorite casserole by sprinkling it with a yummy
topping before baking. Some of our favorite toppings are buttered breadcrumbs,
French fried onions, crushed potato chips, shredded cheese or cooked, crumbled
bacon.
2.Remove Extra Moisture from Wet Vegetables Before Cooking. Frozen
vegetables can be add extra moisture to a recipe which can ruin it. Thaw frozen
vegetables in a strainer so they lose their extra liquid.
3.Don't meat all the way before using in a Casserole. If you cook meat all the
way, it may overcook. Cook your meat up to 2-4 minutes less than the suggested
cooking time.
4.Make Sure Your Casserole Is the Right Temperature Before Baking It. Be
sure to defrost your casserole completely in the refrigerator before you bake it.
This can take up to 2 days. Also, let it come up to room temperature as your
oven preheats. If you put a cold casserole in the oven, the outer edge could cook
too fast while the middle cooks too slowly 5.When making a casserole to freeze,
line the dish with foil, allowing 3 inches of foil to hang over each side. Arrange
the casserole as directed; cover and freeze. When frozen, use the foil to lift the
casserole out of the dish. Peel off the foil, wrap the casserole in freezer paper
and return it to the freezer. When ready to bake, unwrap and place the casserole
back in the pan.

Three Topping Sweet Potato Casserole
INGREDIENTS: 2
1/2 lbs. sweet potatoes (about 5 medium) 2 tbsp. butter, softened 1/2 cup firmly
packed brown sugar 1/2 cup 2% reduced-fat milk 1 large egg 1/2 tsp. salt 1/2
tsp. vanilla extract Vegetable cooking spray 1 1/4 cups cornflakes cereal,
crushed 1/4 cup chopped pecans 1 tbsp. brown sugar 1 tbsp. melted butter 1 1/4
cups miniature marshmallows INSTRUCTIONS: •Prepare filling by preheating
the oven to 400°F.
•Then bake the sweet potatoes on a baking sheet for about 1 hour or until tender.
•Reduce oven temperature to 350°.
•Let the potatoes to cool down until it could be touch.
•Peel the potatoes •Mash it with a potato masher.
•Then beat the mashed sweet potatoes, butter, brown sugar, milk, egg, salt, and
vanilla at medium speed with an electric mixer until smooth.
•Spoon the mixture into an 11-x 7-inch baking dish coated with cooking spray.
•Prepare toppings by Stirring together crushed cornflakes cereal, pecans, brown
sugar, melted butter and marshmallows.
•Sprinkle over sweet potato mixture in diagonal rows by 2 inches apart.
•Bake at 350° F for about 30 minutes.
•Remove from oven; let stand for another 10 minutes.
•Sprinkle miniature marshmallows in alternate rows between cornflake mixture,
and bake for about 10 more minutes.
Macaroni and Cheese Casserole
INGREDIENTS:
1 lb. uncooked cellentani (corkscrew) pasta 2 tbsp. butter
1/4 cup all-purpose flour
3 cups fat-free milk
1 (12-oz.) can fat-free evaporated milk
1 cup (4 oz.) shredded smoked Gouda cheese
1/2 cup (2 oz.) shredded 1.5% reduced-fat sharp Cheddar cheese 3 oz. fat-free
cream cheese, softened
1/2 tsp. salt
1/4 tsp. ground red pepper, divided
1 (8-oz.) package chopped smoked ham
