This document is an accepted manuscript that analyzes the metabolic profiles of glucosinolates (GLSs) and their breakdown products in leaves and tubers of 16 varieties of Brassica rapa turnips. Thirteen GLSs were identified, including 8 aliphatic, 4 indolic, and 1 aromatic GLS. Higher amounts of 3-butenyl GLS were found in both plant organs, while 2-hydroxy-3-butenyl GLS and 2-phenylethyl GLS were more abundant in tubers.
