1. In a large skillet, heat the oil on medium heat and stir fry the quinoa and onion for about
5 minutes.
2. Add the garlic and jalapeño pepper and cook for about 1-2 minutes.
3. Stir in the undrained can of diced tomatoes with green chilis, taco seasoning mix and
chicken broth and bring to a boil.
4. Reduce the heat to medium-low and simmer for about 15-20 minutes.

1 lb. lean ground beef 1/2 tsp chili powder
1 onion, diced 1/2 tsp paprika
1 green bell pepper, diced 1/2 tsp garlic powder
1 (14 oz.) can beef broth 1/2 tsp salt
2 C. fresh corn kernels 1/2 tsp ground black pepper
1 (10 oz.) can diced tomatoes with 1 tsp minced cilantro
green chili peppers 1 1/2 C. uncooked white rice
1 (15 oz.) can tomato sauce 1 C. shredded Cheddar cheese
1/2 C. salsa
Directions
1. Heat a medium pan on medium heat and cook the beef till browned completely.
2. Drain off the grease from the pan.
3. Add the onion and green pepper and cook till the onion becomes tender.
4. Stir in the beef broth, corn, tomatoes with green chili peppers and tomato sauce, salsa, chili
powder, paprika, garlic powder, salt, pepper and cilantro and bring to a boil.
5. Stir in the rice and cook, covered for about 25 minutes.
6. Top with the Cheddar cheese and cook for about 10 minutes.
Restaurant-Style Latin Rice 10
